Have potatoes without having potatoes
For those who want the taste of potatoes without actually eating potatoes, this is a good compromise. Cauliflowers are very low glycemic, so it is a good substitute.

- Break up head of cauliflower and place pieces in a steamer.
- Steam cauliflower until cooked al dente (have to leave some texture to enhance the flavor)
